A Quick, Easy & Delicious Salad

I admit that I’m not a fan of salads.  Unless they are covered in yummy stuff that completely takes away from the nutrition of eating a salad.

Yeah, it defeats the whole purpose of eating a salad; I may as well have a burger.

But,as part of our new, frugal -and hopefully healthier- way of living we have decided to cut food costs by having two meatless meals per week.  So I have been searching for recipes that are yummy and don’t leave me missing the meat.

This 5 Minute Southwest Salad is great as a main dish or a side for a cook out. The protein from the black beans and corn will fill you up and the crunchiness from the tortilla chips will help you forget it’s a salad.
