Spinach Quiche

I love a quiche.  It’s cheese…  and eggs…  in a pie.  What’s not to like?  My girls will actually eat it, too…  Probably because we call it “cheese pie” or even “the great pie” ala the Backyardigans.

I especially like this spinach quiche (recipe here) because you don’t need really expensive cheese and it tastes really good.  I had it for dinner last night and breakfast this morning!
