Mexican Without Meat? Yes!

Fab Food Friday 114We really like tacos.  And burritos.  And enchiladas.  Chimichangas.  Tostadas.

You get the point- we like Mexican food.  But sometimes I see another ground beef recipe and I sigh.  When that happens I turn to these Empanadas.

The most difficult part of the recipe is spreading the dough into circles.  Just a few simple steps and you’ve got dinner on the table.

    Jody, being 1/2 mexican and raised eating lots of mexican food, I’m very familiar with the dishes you like at your house. However, I don’t recall ever eating empanadas for a supper meal. We did have empanadas many times as a pastry/dessert. The dough is flavored a little and the stuffing is pumpkin or other fruits. Umm, good. I like mexican food!
    Maybe when we get together for scrapping, I could spend a few minutes and teach you how to role tortilla dough (which is the same as this). I’m no pro like my abuela (grandma), but I can get them done.
